As Cosmo continues to grow, careful planning and consideration is given to retaining superior quality of flavour and texture to all its products. The success of its business is down to its ability to retain unique methods as it grows which, essentially ties the cooking of its past to the present and its future.

The emphasis of this philosophy is designed into its new 1200 sq.m. premises commissioned in January 2003. Essentially the production facility was designed to adopt a large scale catering style operation as opposed to a heavily mechanised one therefore retaining the same approach to making pizza as started by Cosmo Senior all those years ago. The two essential areas to creating Cosmo pizza are its Bakery and Kitchen sections.

It all starts with high quality flour and Cosmo has for decades always used strong flour with a high protein content. Today customers demand cleaner label products. Cosmo uses an untreated unbleached flour and has done for decades unlike so many other manufacturers who are only now responding to consumer pressure for cleaner healthier products.

Cosmo Senior has always believed that good texture and high flavour in bread can only come from dough, which utilises developed or Mother dough. This Mother dough is essentially flour, water and yeast which is mixed and allowed to rest for many hours. This aged dough is then freshened by adding fresh flour and more yeast with some salt and oil. After this process double proving takes place, firstly by allowing dough balls to rise and develop, then secondly when the pizza has been formed before baking. This method ensures that the finished pizza has good aeration is light and has an elastic feel when eating and above all superior flavour. With the use of today’s fan assisted ovens it is important that the pizza still retains good moisture when leaving Cosmo so as to ensure perfect results when being fully baked off.

All pizza sauce is made in house starting with basic chopped tomatoes. The recipe has a very distinct flavour and is unique to Cosmo pizza. Fresh vegetables and meats are purchased on a daily basis for preparing and cooking. This is an area where larger manufacturers avoid preferring to buy in prepared toppings. Again many of the recipes stem from those used by Cosmo Senior over the years.


Due to the kind of flour used and the mother dough system, our finished pizzas are robust and can be cooked with a variety of different ovens using different temperature/time combinations.
